Dealing with an onslaught of distressed Covid-19 patients and fear of contracting the virus is what Anna-Lena du Toit faces daily at Cape Town’s Groote Schuur Hospital.

The dietitian was long responsible for the nutritional management of patients in the intestinal failure unit and surgical ICU at the state facility, until Covid-19 struck, resulting in a surge of infected patients and several staff members being hit by the virus.

As a result, she was reassigned to a 12-bed Covid-19 ICU and two Covid-19 wards, where it is her duty to provide appropriate nutrition support...
