I suspect a springtime visit to Restaurant Mosaic at the Orient Boutique Hotel in Pretoria is lovely at the best of times. Sauntering around the gardens between the Moorish buildings, breathing the mingle of fresh air and jasmine blooms, bearing witness to new life as it unfolds.

On a recent visit to the launch of chef Chantel Dartnall’s new spring and summer menu, the word “otherworldly” was heard floating around conversations as we gathered in the foyer of the hotel’s art gallery to sample tantalising Piper-Heidsieck champagne and wander around the lavish surrounds.

After a dreary few months being confined to our homes throughout an insufferably cold winter, we could thoroughly appreciate the work the team undertook these past few months while the venue was closed — tending to the gardens and apiaries, and working on the expansion of the gallery...
