Mushrooms are one of the biggest ingredient trends of the year, popping up on menus everywhere – fresh, in powder form, and even candied and in ice creams.

According to research by Mintel, demand is growing mostly because of their meaty flavour and health properties as part of vegetarian and pescatarian diets. Sales of mushrooms in the US have increased by 240% over the past six years.

Chefs, food manufacturers and retailers are looking for innovative meat substitutes and plant-based alternatives to meat. Last year, sales of plant-based foods increased by 20% in the US (up from 8% in the previous year)...
