Michelin magician does his fare share for your mum

Top chef Liam Tomlin and UCOOK have put all you need in a box to make Mother's Day extra-special

For many years a trip to Cape Town has been incomplete without a visit to Irish-born, Michelin Star chef Liam Tomlin’s tapas-style restaurant, Chefs Warehouse.
Lately, his new restaurant in the City Bowl, Thali, also has to be added to the itinerary. Soon to be added to the list of must-eat-at restaurants will be Chefs Warehouse at Beau Constantia, as soon as I have a free lunchtime in Cape Town to try it out.
The beautifully located addition to his restaurants was recently awarded fourth place in Eat Out’s Top Ten list of restaurants.In a stroke of genius, UCOOK – a service that delivers fresh ingredients to your door, enabling you to make your own multicourse dinner with the added benefit of no waste – has teamed up with Tomlin to help you create a Mother’s Day meal fit for a queen.Tomlin is known for his delicious tasting menus, tapas style with exceptional flavour combinations, and extraordinary tastes that are nevertheless not too pretentious. So when UCOOK offered me the opportunity to try out one of their Mother’s Day boxes, it was a no-brainer, especially since I knew that whatever he had decided to include on the menu, it would have that five-star restaurant experience while maintaining that home-cooked feel.The Liam Tomlin Mother’s Day box consists of a three-course meal (you’re able to select your dishes) and a bottle of wine to go with each course, provided by Warwick Wines, along with all the ingredients and instructions for a veritable feast.
“Warwick Wines is such a global brand, but I love that it’s still a family business,” says Tomlin. “It’s still very personal to the customer. They’re very easy wines to pair with our food and I think they’re great value for money.”For starters you can choose between sweetcorn and basil soup; raclette and miso salmon.
Mains include roast chicken, mushroom risotto or lamb with mango couscous.
Dessert is the ever-so-refined lemon posset.The wines to accompany your choices are Warwick Chardonnay Méthode Cap Classique, 
Warwick First Lady Sauvignon Blanc and the Warwick First Lady Cabernet Sauvignon.
Each course takes a little longer to prepare than I’m used to, but there are notes explaining what can be made ahead of time so you can spend as much time with your mom on the day.
The meal cards that come in the box are of a larger format, so you can keep them and repeat the whole experience next year.Tomlin has worked closely with UCOOK to identify popular tastes and rework recipes from his menus to create the three-course lunch. “I wanted to keep the dishes very simple,” he said, “so that people can reproduce them at home.”
Starter choice: miso salmon
It seems complicated on paper, but it was very easy to make, and full of fresh flavours.Main choice: roast chicken with golden potatoes and a simple herb salad
Seemingly simple but takes some preparation.  Make the potatoes the night before, and fry them on the day. To seasoning the chicken place lemon and garlic around and inside the chicken.Dessert: lemon posset with berry coulis and pomegranates
This creamy dessert has subtle flavours that blend beautifully with each spoonful. The creamy texture and slight crunch and tartness from the pomegranate is a wonderful combination.The UCOOK boxes are available for any family size – portions for four, six or eight people. The cost per person is about R315 including VAT. Each box comes with a three-course meal and Warwick Wine. It is available to order until May 3 2018.
